Job Description

Your Key Responsibilities Will Include:

  • Ensure all catering service areas are set up and ready for service.
  • Assist with the planning of menus and collaborate with the Food and Beverage Manager, Executive Chef on new menu ideas and improvements.
  • Assist with the organisation of promotional activities across the Catering Department.
  • Allocate tasks and duties to staff, managing performance to ensure compliance with standards, policies, and targets for sales and expenditure.
  • Assist in the selection of catering staff and provide on-the-job training for all new catering staff.
  • Monitor customer service response times, meal quality, and till line efficiency.
  • Handle and resolve customer complaints, disputes, and service issues effectively.
  • Manage reservations, table allocations, and assist with greeting guests or taking orders when required.
  • Liaise with chefs, kitchen staff, and management teams to ensure smooth operations across all service periods.
  • Maintain cleanliness, presentation, and hygiene standards across all front- and back-of-house areas.
  • Ensure staff are correctly uniformed, well-presented, and adhering to GRSL presentation policies.
  • Oversee display fridge presentation, room service delivery, and general dining facility presentation.
  • Maintain records of stock levels for the catering department and complete weekly orders for catering items required.
  • Ensure compliance with health regulations and organisational policies, including food & beverage usage for staff.
  • Monitor and maintain safe work practices, reporting hazards, incidents, or maintenance requirements promptly.
  • Assist in the development of catering rosters to meet operational needs.

  • Customer Service Excellence – Strong focus on delivering exceptional dining experiences and effectively handling complaints or disputes.
  • Food & Beverage Knowledge – Understanding of food preparation, presentation standards, and hygiene requirements.
  • Operational Planning & Organisation – Ability to collaborate and provide feedback to Management regarding menus, manage reservations, assist with rostering requirements, and coordinate catering or bistro operations efficiently.
  • Communication Skills – Clear, professional communication with staff, management, kitchen teams, and customers.
  • Problem Solving & Decision Making – Capacity to respond to issues quickly, make informed decisions, and resolve operational challenges.
  • Attention to Detail – Ensuring high standards of meal quality, hygiene, presentation, and staff compliance with policies.
  • Adaptability & Resilience – Ability to thrive in a fast-paced, dynamic environment and manage competing priorities.
  • Safety & Compliance – Understanding and application of workplace health and safety practices, including correct use of equipment and reporting hazards.

Desirable Qualifications You May Have Or Be Willing To Obtain:

  • Certificate IV in Hospitality or willing to complete

Essential Qualifications & Experience You Will Have:

  • Minimum 2-3 years relevant experience
  • Responsible Service of Alcohol Competency Card
  • Responsible Conduct of Gambling Competency Card
